Tom Kha Gai
One favorite Thai dish is Tom Kha Gai which is a hot sweet soup made with coconut milk, lemon grass and chicken. Generally, this soup was named in English menu as Chicken Coconut Soup or Thai Coconut Soup

 

Ingredients:
3 Cup water (nam)
4 Leech lime leave (bi ma grood), tear in half
3 Slices of galanga (kah), 1/4" thick
1 Lemongrass (ta krai) cut into 1inch long
1/2 Red onion (haum dang), slide into 4 pieces & grill in toaster-oven for 5 minutes.
1 Chicken breast (gai), cut in cube
1 Cup coconut juice (nam ga ti)
1/2 Small white onion (haum yai), sliced
1 Tomato; slice or 5 cherry tomato; cut in half
5 Mushrooms (het), cut in half (optional)
2 Green onions (ton haum), finely chopped
1-2 Thai chili pepper (prik kee noo)
3 Tablespoon lime juice (nam ma now)
1.5 - 2 Tablespoon fish sauce (nam pla)


Garnish:
1. In a medium pot, bring Water to boil.
2. Add leech lime leave, galanga, lemongrass, red onion.
3. Add chicken, coconut juice and white onion, bring to boil
4. Reduce heat and then add tomato, mushroom, green onion and Thai chili pepper. Continue cooking until the chicken is cooked.
5. Remove from heat and then immediately add lime juice and fish sauce. Serve as appetizer or with rice.
